Protein Crepe Ingredients

  • 1 cup of purpose flour
  • 2 scoops of Ultimate Nutrition’s protein powder
  • 2 large eggs (or egg substitute for a vegetarian option)
  • 1 ½ cups of milk (dairy or plant-based)
  • 1 tsp of vanilla extract
  • A pinch of salt
  • 1 tbsp of melted butter or cooking oil
  • Cooking spray (for the pan)

Cooking Steps

With your ingredients gathered, follow these steps. 

#1 Prepare the Batter

In a large mixing bowl, whisk together the flour and protein powder. Add the eggs, milk, vanilla extract, and salt. Whisk until the mixture is smooth. 

Stir in the melted butter or oil until well incorporated. Let the batter rest for 5-10 minutes, allowing the flour to absorb the liquid, which helps get a smoother texture.

#2 Cook the Crepes

Heat a non-stick skillet or crepe pan over medium-high heat. Lightly coat with cooking spray.

Pour a small amount of batter into the center of the pan. 

Tilt and swirl the pan to spread the batter thinly across the surface. Cook for about 1-2 minutes or until the edges of the crepe begin to lightly brown. The bottom should be light golden brown.

Carefully flip the crepe with a spatula and cook for another 1 minute on the other side.

Remove the crepe from the pan and repeat with the remaining batter. 

Adjust the heat and grease the pan as needed between crepes.

#3 Serve and Enjoy

Fill each crepe with your desired toppings, such as fresh fruit, yogurt, honey, or a sweet or savory filling. Serve the crepes rolled up, folded, or stacked, garnished with additional toppings if desired.

#4 Storage Tips

Store leftover crepes in the refrigerator, separated by wax paper, for up to 3 days. 

Reheat gently in a skillet or microwave before serving. You can also freeze crepes for up to 2 months. Thaw overnight in the refrigerator and reheat as above.
